Where do the receipts come from?
From the monthly returns venues file with the state. Only venues that sell mixed drinks file them, so a beer-and-wine shop shows no figure, and we never estimate one.
How do you tell a new room from a change of hands?
If the address was already filing returns before the new license, it's marked as a change of hands: a new operator in a room that was already pouring. Both are worth a call, for different reasons.
Do you include pending applications?
Yes, on their own list. An application isn't a license, so it never mixes with the licensed rooms.
